Dishes are British, very seasonal and juxtapose flavours in modern but not outlandish ways that will leave you craving more – and wondering why other kitchens can’t manage so deftly.

A brick of lamb breast comes with its own dark crunchy skin. Usually it is served bound and tied. Here it just flops over a pile of lentils lubricated by another sticky jus and lots of mint.

When I went I ate a perfectly good skirt steak with dripping chips and an onion fritter, a cobnut salad (which comes with salad cream, of which I’m a shameless fan), plus a date pudding with marmalade ice cream and treacle sauce. ‘Yes’ to all of this.
